Pumpkin Pie Collagen Tarts
Ingredients
CRUST
- 3 1/2 tablespoons butter or coconut oil
- 12 gluten-free graham crackers or regular graham crackers
- 1 tablespoon monk fruit or no sugar sweetener
- Pinch of salt
FILLING
- 8 ounces cream cheese or laughing cow cheese
- 1 cup plain greek yogurt
- 1/2 cup pumpkin puree
- 2 eggs
- 1 teaspoon vanilla
- 1/3 cup monk fruit or no sugar sweetener
- 2 tablespoons gluten-free flour or regular flour
- 1/2 teaspoon cinnamon
- 1 teaspoon pumpkin spice
- 2 scoops AnnieMak Clean Multi Collagens
Directions
- Preheat oven to 350 degrees
- Fill muffin pan with liners or use silicone muffin pan
- Pulse graham crackers, sugar, and salt in a food processor, then add in the butter or oil until evenly distributed. Press 2 teaspoons of crust in each muffin tin. Bake for 5 minutes.
- With a standing or hand mixer, blend cheese, flour, and sugar together. Blend until completely smooth. Add Greek yogurt in 1/4 cup at a time and blend until smooth. Add in egg, vanilla, and pumpkin, until blended. Then fold in spices.
- Pour the filling over each Cheesecake crust. Return to oven and bake for 15 to 20 minutes.
- Cool on rack for 30 to 45 minutes. Refrigerate for 1 hour before serving.
- Don’t skip the whip! Top each pumpkin tart with whipped cream.
