This pancake recipe will have your tastebud doing a morning celebration dance! With all of the yummy flavors of a cinnamon churro, plus coconut, you will love this fun twist on a traditional breakfast favorite. Packed with protein and nutrients, this is definitely a fun way to kick off your morning or your weekend!

Coconut Cinnamon Collagen Pancakes 

Ingredients   

  • 1 cup coconut milk  
  • 1 cup flour of choice  (adjust ratio if not using a wheat flour)
  • 1 egg 
  • 1/2 teaspoon salt 
  • 1/2 teaspoon cinnamon 
  • 1 tablespoon baking powder  
  • Extra cinnamon and sugar set aside (I prefer monk fruit sugar) 

 
Directions 

  1. Mix together all dry ingredients in a glass bowl 
  1. Add coconut milk and egg to the dry ingredients.  
  1. Stir together until smooth. If the batter is still too thick, add a tablespoon of coconut milk at a time until it reaches the desired consistency.  
  1. Heat up a pan or griddle and coat with coconut oil.  
  1. Pour batter on griddle at medium temperature and cook for 2 minutes on each side.  
  1. Mix together extra cinnamon and sugar (I prefer monk fruit) and sprinkle on top of pancakes.
