It’s that time of year! When you want to cozy up inside on the couch with a fluffy blanket, a good book, a fire, and a warm bowl of soup. This healthy take on a cream of broccoli soup will check that bowl of soup box and have you coming back for more.

Cream of Broccoli Soup with Collagen

Ingredients   

  • 1 tablespoon coconut oil  
  • 2 medium green onions, coarse or finely chopped  
  • 2 cloves garlic, minced  
  • 1 large head fresh broccoli, chopped  
  • 1 tablespoon dried basil (or fresh from your supermarket is even better)   
  • 2 cups chopped swiss chard, kale or collards (or a mix for a fun twist) 
  • 1 ½ cups raw milk or unsweetened coconut milk  
  • 1/4 teaspoon salt  
  • Pepper to taste  

 
Directions 

  1. Cut and prep all veggies 
  1. Melt coconut oil in large soup pot and sauté green onion and garlic over medium heat until translucent – about 2 minutes  
  1. Stir in the broccoli and stir frequently. Cook until it is bright green. 
  1. Add basil and chopped greens. Cover and steam for 3 minutes.  
  1. Transfer vegetables to blender, add collagen and a little milk of your choice, and blend until smooth. May need to do in two batches depending on your blender.  
  1. Transfer puree back to the pot and add the remaining milk of your choice, sal,t and pepper to taste.  
  1. Reheat on low to medium heat for 10 minutes and serve.
