This healthier version of chocolate cake, flourless, molten chocolate, gooey goodness, is the perfect way to share love this Valentine’s Day! Whip this up for your lover or maybe it’s the perfect way to treat yourself this year! Either way, this is a treat you will not regret treating yourself to this V-Day! 

Lover’s Day Molten Chocolate Collagen Cake

Ingredients   

  • 1 cup hot chocolate of your choice  
  • 1 scoop vanilla protein of your choice  
  • 1/2 cup of milk or dark chocolate  
  • 1/2 cup of butter  
  • 3 large eggs  
  • 1/2 cup sugar of your choice or monk fruit sweetener 
  • Optional – 1/2 teaspoon instant coffee  

 
Directions 

  1. Preheat oven to 390 degrees. Butter 4 ramekins or silicon muffin tray.  
  1. Melt butter and chocolate using double boiler method  
  1. In a large glass bowl whisk eggs and sugar until well combined. Slowly whisk in melted chocolate, then add hot chocolate powder, protein powder, collagen, and coffee if you choose to add it.  
  1. Split the batter evenly into 4 ramekins or silicon muffin trays.  
  1. Bake for 10 minutes until the edges pull away from side and top is still soft and squishy.  
  1. Remove from oven and let stand for 3 to 5 minutes to shrink back down.  
  1. Remove from the ramekins or muffin trays and serve with ice cream or whipped cream.
