I can hardly think of anything better than a warm pumpkin waffle on a rainy, cold, fall morning. This protein and gluten-free waffle recipe will hit the spot for fall vibes and have you asking for seconds! The perfect way to enjoy a delicious meal with your family and start your fall weekend.

Pumpkin Protein Waffles

Ingredients   

  • 15 ounce can pumpkin puree   
  • 1 teaspoon baking powder  
  • 1/2 teaspoon ground cinnamon  
  • 1 teaspoon pumpkin spice  
  • 1/2 teaspoon salt 
  • 4 tablespoons olive oil or coconut oil  
  • 1 teaspoon vanilla  
  • 2 eggs  
  • 1/2 cup sugar 
  • 1 1/2 cups gluten-free flour   
  • 1/2 cup milk   

 
Directions 

  1. In a large glass bowl combine the canned pumpkin, granulated sugar, eggs, vegetable oil, salt, pumpkin pie spice, cinnamon, and pure vanilla extract and mix well. 
  1. Add gluten-free flour, baking powder, and collagen. Mix until fully combined. 
  1. Add the milk (or dairy-free milk) and mix until fully combined. The batter will be thick. 
  1. Heat up waffle iron. Use your butter, oil, or non-stick ingredient of choice to coat the iron.  
  1. Scoop batter and cook waffle according to iron’s instructions.  
  1. Serve warm!
