Pumpkin Protein Waffles
Ingredients
- 15 ounce can pumpkin puree
- 1 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1 teaspoon pumpkin spice
- 1/2 teaspoon salt
- 2 scoops AnnieMak Clean Multi Collagens
- 4 tablespoons olive oil or coconut oil
- 1 teaspoon vanilla
- 2 eggs
- 1/2 cup sugar
- 1 1/2 cups gluten-free flour
- 1/2 cup milk
Directions
- In a large glass bowl combine the canned pumpkin, granulated sugar, eggs, vegetable oil, salt, pumpkin pie spice, cinnamon, and pure vanilla extract and mix well.
- Add gluten-free flour, baking powder, and collagen. Mix until fully combined.
- Add the milk (or dairy-free milk) and mix until fully combined. The batter will be thick.
- Heat up waffle iron. Use your butter, oil, or non-stick ingredient of choice to coat the iron.
- Scoop batter and cook waffle according to iron’s instructions.
- Serve warm!
