This will be a fan favorite that you will come back to time and time again. Serve them at your Halloween or Fall party for a low-sugar alternative that guests are sure to love! 

Pumpkin Fudge Collagen Squares

Ingredients   

PUMPKIN LAYER 

  • 1/4 cup crunchy peanut butter or your nut butter of choice  
  • 1 tablespoon canned pumpkin puree  
  • 1 tablespoon maple syrup  
  • 1/2 tablespoon melted coconut oil 
  • 1/2 to 1 teaspoon pumpkin pie spice  
  • Cinnamon (optional) 

CHOCOLATE LAYER 

  • 2 tablespoons melted coconut oil  
  • 1 1/2 tablespoons creamy peanut butter  
  • 1/2 tablespoon cocoa powder  
  • 1 teaspoon maple syrup  

 
Directions 

  1. Prepare two glass bowls. One for the pumpkin layer and one for the chocolate layer.  
  1. Mix all ingredients for the pumpkin mixture in one glass bowl.  
  1. Scoop pumpkin mixture into a cupcake pan or silicon tray. Fill each slot halfway.  
  1. Pour a thin layer of chocolate over the top of the pumpkin layer if there is leftover chocolate use the rest of it where needed. This will make 5 to 8 squares.  
  1. Place tray in the fridge for 30 minutes to harden.  
  1. Store for several days in the fridge and eat over time.
