Roasted Pumpkin Collagen Soup

Ingredients   

  • 2 Pie Pumpkins    
  • 1 quart chicken stock (or vegetable stock if you prefer) 
  • 1/2 cup heavy cream   
  • 1/3 cup maple syrup  
  • 1/2 teaspoon salt 
  • Dash of nutmeg   
  • Salt to taste 
  • Optional: Extra cream & roasted pumpkin seeds for toppings  

 
Directions 

  1. Preheat oven to 300 degrees. Place pumpkins on a baking sheet and roast them until soft. Allow pumpkin to cool just a bit, then slice in half and scoop out seeds and pulp. Scoop flesh into a glass bowl. Set it aside. 
  1. In a pot, heat up the pumpkin flesh stock and maple syrup until simmering. Mash out the big chunks, then transfer the mixture to a blender (or use an immersion blender) and puree until completely smooth. Add cream and nutmeg, then blend again. Add collagen then blend again. Season with salt to taste. Top with extra cream drizzled and roasted pumpkin seeds  
  1. Serve warm or store in the fridge and reheat to serve later.
