This healthy blueberry pancakes recipe is a breakfast superstar: gluten-free and packed with collagen for added protein. And it is one of the most delicious recipes to boot! On a cozy Saturday morning, whip these up for your family and enjoy! 

Gluten-Free Blueberry Collagen Pancakes

Ingredients   

  • 1/2 cup milk or unsweetened almond milk  
  • 1 teaspoon vanilla extract  
  • 1 tablespoon butter or coconut oil  
  • 2 cups fresh blueberries  
  • 2 tablespoons maple syrup or syrup of your choice  

 
Directions 

  1. In a medium to large glass bowl, mix the milk or almond milk, vanilla extract, butter, or coconut oil, until well combined.  
  1. Add pancake mix and collagen and stir until well combined. If the mixture is too thick add a little more liquid until the batter is moist.  
  1. Heat a large pan or skillet and grease with butter or coconut oil. Turn to medium heat.  
  1. Pour 1/3 cup batter onto the hot surface for each pancake. Top with 5 to 7 fresh blueberries.  
  1. Cook each side for about 2 minutes.  
  1. While pancakes are cooking in a saucepan 1 ½ cups blueberries, 2 tablespoons syrup, and 2 tablespoons water and put over medium heat. Stir frequently to prevent burning. Cook until berries burst, and the mixture has turned into a runny jam consistency. About 3 to 5 minutes.  
  1. Serve pancakes with blueberry syrup on top and maybe some whipped cream for added flavor and fun!
